Who We Are
Welcome to Marianist Technical Institute – Mombasa, SCHOOL OF CATERING. We are a Vocational Technical Institute approved by Technical and Vocational Education and Training Authority (TVETA) Reg. No. TVETA/PRIVATE/TVC/0029/2017.
We are a well-established institution with adequate facilities and qualified staff having great experience in catering industry. Our school of catering is specifically designed to prepare people with the requisite expertise for the ever growing hospitality industry. We have a variety of courses both full time and part time depending on the needs of individuals targeting both the young and the old. We offer both locally and internationally recognized certificates examined by KNEC.
The institute is located in Bombolulu area off Mombasa – Malindi Highway about 150 meters past Bombolulu Cultural Centre.

Is to strive in molding its students to acquire holistic development exceeding their expectation in order to meet the future challenges within the hotel industry.
Our Goal
Is to graduate holistic trainees to take various positions in establishments such as hotels, restaurants, and cruise lines among others. As well they can be self-employed as a personal chef or start a catering business.

Courses We Offer
1. Information Technology
At Marianist Technical Institute – Mombasa School of Catering, we offer Information Communication and Technology program at advanced level which helps in opening more opportunities to a rewarding profession with multiple skills.
ICT professionals helps in supporting the emerging cultures and goals of people that they serve. This is shown by the growing demand for ICT skills in the job market.
2. Human Development Class
This is a self-awareness program given to all trainees. It encompasses human development education and helps students develop values and skills in themselves and the community.
3. Faith Living Class
We are a Catholic School with a belief in ecumenical discussion. School begins with Christians leading prayer Monday-Thursday and a Muslim student leading prayer on Friday.
Classes consist of basic Christian teaching but allowing for input from the Islamic perspective. It is a time for students to share and strengthen their faith.

4. Catering and Accommodation
Trainees are taught both theory and practical in Food production, Service and Housekeeping. The attention given to the trainees by the well experienced instructors leave them better equipped and holistically developed for the hospitality industry. After the class work, trainees are sent out on industrial attachments in various restaurants, hotels and hospitals.
Objectives
On completion of the training program, the trainees should be able to: -
- Cook and prepare different types of cuisines
- Give efficient and quick service to guests
- Adopt best practices in housekeeping and accommodation.

5. Food & Beverage Production
This training is intended to impart on the trainees knowledge, skills and attitude required of a cook in a commercial establishment. It is designed to give the best training which will result in a holistic development of an individual. It covers both the theoretical and practical aspects of food and beverage production.
General objectives
At the end of this course trainees should be able to:
- Handle different commodities appropriately
- Use food and beverage production tools and equipment appropriately
- Produce meals using correct methods and procedures.
- Control food cost
- Understand the importance of courtesy at work

6. Food & Beverage Service
The program is designed to impart on trainees skills, knowledge and attitude required of any professional within the hotel industry. Instructions will be through lectures and demonstrations followed by practical sessions. Simulation and real experience should occupy most of the trainee’s time.
Objectives
At the end of this course unit trainees should be able to:
- Understand the role of the food service section in marketing
- Serve food and non-alcoholic drinks using correct procedure and techniques.
- Observe hygiene and safety rules in food service
- Perform pre and post service tasks correctly within specific time.
- Be courteous at work

7. House Keeping
In this program, trainees are able to make provision of a clean, comfortable and safe environment through a well-structured syllabus which provides a unique balance between theoretical & practical input by use of advanced teaching aids.
Objectives
- Identify potential hazards associated with poor housekeeping practices.
- Identify and understand legal requirements associated with poor housekeeping practices, including references to provincial safety legislation, Fire Code, etc.
- Learn specific ways to improve housekeeping in their workplace as well as methods to sustain the improvements.

INDUSTRIAL ATTACHMENT
All students taking courses exceeding 3 months duration will be placed on attachment at the end of each module. Students will be sent to the relevant facilities for on-job training under supervision of the facility management.
EDUCATIONAL TOURS & FIELD WORK STUDIES
To help learners identify with the real life in the job market, there will be visits to hotels and additionally there will be field research for students to explore more of the market.
CO-CURRICULAR ACTIVITIES
Marianist Technical Institute does not only concentrate on the academic training but it has a well instituted co-curriculum program. This program provides an opportunity to the learners to identify and develop their God-given natural talents. We participate in Athletics, Sport and Talent show activities.
JOB CREATION PROGRAM
This program helps our graduates to be attached after training. Arrangements are made to put them in areas that make them responsible and productive with their prospective employers. This office also organizes education tours to enable students learn and familiarize themselves with the operations of a salon facility. As well it serves as an eye opener to the trainees who have never had the opportunity to be in such a place. It arranges government trade test for students.
PRODUCTION DEPARTMENT
Marianist School of Catering also has a Production department which offers the following services:
· Furniture (Home, Office, Hotel and Church)
· Welding items and services i.e. Grill doors
· Catering services i.e. Weddings, family get-togethers, birthdays, corporate luncheons/dinners
· Hiring of Tents and Chairs
· Computer and Bureau services i.e. Typesetting, cyber café, photocopying
CREDENTIALS
After successful completion of training, the trainees sit for end of module Kenya National Examination Council (KNEC) exams. In addition to this, the institute also sets exams in all the skills taught at the institute and award the graduates with internal certificates.
